Put some stabil in the tank

Water and vapors may still be in lines / hoses / engine and stabil will make sure it doesn't
End up seizing ur Bosch fuel injection pistons

Go thru 2-3 tanks of gas and change fuel filter as it will get clogged

Ps, try saddle soap on seats, dash, doors....that leather can come back from a lot

Lots of issues with your car, but none that can not be un done.
I do not dispense with advise readily, given that I am neither a mechanic nor a Pagoda guru. However, having rescued a Pagoda from a long sleep I will give you one piece of advise. I would remove the gas tank and have it chemically cleaned/flushed whatever. Snow White fired right up after her long sleep, but I didn't get 20 kilometers once she was road worthy (she is a Euro spec car) before the sludge in the gas tank fouled everything. Sloshing and what not. In the end, and despite 4 dips in the tank, I was forced to buy a new gas tank. The original one looked perfect from the outside by the way, but after ten years of sitting, the innards could not be excised.
This being said, it was my only set back bringing Snow White back to life. It took me six months before I even dared to start her. Another couple to figure out what was wrong.
Since that day? Well, I just drive her. Anywhere when the weather beckons.
I haven't actually checked, but I think there are 10,000 more kilometers on the clock then when I got her.
Effortless kilometers in the sun with the roof down for the most part.

This looks like a fun project.  Done it, been there.  By the looks of the interior dashboard, car's original exterior color must have been Hellelfenbein #670 (Cream White), and upholstery was (if leather) Weinrot #1087, or (MB-Tex) Rot #2500.   Are you going to take back to original color?  Looks like you got most everything there, rust will take the time to repair correctly.  Gongrads.  Enjoy.
