There are
a lot of detailed engineering differences between the models. Most of these happened over time and are not necessarily associated with particular model years, but before/after particular chassis numbers.
Aside from these countless little details, later cars (after 1969?) originally sold in the USA had fuel economy and emissions controls added. This adds complexity to getting the engine to run properly. The larger cars were more powerful, but the 230SL typically had a manual transmission and no A/C (lighter weight). The 230SL engine is more expensive to overhaul. The 230SL is commonly thought to be more sporty handling and the 280SL more luxurious. Most 230SL and 250SL do not have head rests or 3-point seat belts. Most have 2-point seat belts. The biggest enemy is rust, so make
sure the car you consider buying doesn't have a bad rust problem.
They are all great cars, some what expensive (everything is relative), and once everything is repaired and corrected they more reliable than any other 40 year old car I know of. I don't know of any details that would dictate buying any particular version (230, 250, or 280).
