Wiring harness

I am seeking advice about wiring harnesses.  I am in the process of doing a complete restoration on my 1970 280SL.  I am fairly new to the Mercedes world and still learning a lot.  I have been restoring Corvettes for the last 30 years and have found the experiences in restoring Corvettes much different then restoring Mercedes.  There seems to be more information and judging manuals available for Corvettes in the effort to restore.  My question is in restoring wiring harnesses; what is the best process in either restoring or replacing wiring harnesses.  No matter the restoration, I believe in making sure the wiring harnesses are either restored or replaced.  I want to make sure if I replace the harness, that the replacement harness is as close to original as possible.  Is there a good replacement available.  I have a long way to go on this restoration, so this won't be my last question.  Any help appreciated.

If above doesn't work out, I am installing a wiring harness that came from Rode Island wiring.

All wires and colors matched perfect. No connecters though. You will have to use your connectors and pins.
