I notice that some models have seats with headrests and some without. Is this specific to a particular W113 model or year?

US-spec cars tend to have headrests as they were mandated at some point, i believe, during 280 SL production. in europe, however, headrests were optional until the very end of production.

This  website, http://113.mbz.org/chrono/, has a pretty good summary of when what changes were made to the US cars (of course, without guarantee for accuracy). According to it, headrests were added as of January 1968 production 280SL for the US.

As far as Australian cars are concerned only 280SL's post 1969 were fitted with Headrests. The earlier cars did not have head rests. However in order to feel safe in modern traffic most auto trimmers are able to add a set of Headrests from a W107 or W108 to the existing seats.
