I'd have to say I am closer to handy than a slob -- however I do have two conflicting quirks: I am kind of a perfectionist AND I am kind of impatient. Leads one to anger management I'm afraid...
But if I were to get the wheelskins, I am thinking dark blue? Agree? (as you can see, while you are expensive, you clearly have good taste as well!)

Feel free to mention my name and show her the pictures. She'll agree your car is much too fine, and she fine a lady, to be riding in a Pagoda with its steering wheel covered in anything less. I agree, dark blue or whatever is closest to your dash/seat/steering hub color.
I'm like you, a perfectionist, but want it done yesterday. I have to force myself to slow down and keep repeating, "haste makes waste." You'll do fine. Just make sure to keep the seam where you want it as you move along. I put the seam at the finger indentations so you see it from outside the car, but not inside. It's a personal decision. Don't go with Wheelskins stock size. Measure the diameter and the circumference (girth) of the wheel (2 something if I recall). Skew it tighter than looser, you can stretch a bit, but just a smidge (1/32 or so) under actual is about it. Be sure to show us the results and the Ebayer I mentioned below is the cheapest and fast (for us impatient types). Wheelskins site is much more expensive.
Here's a pic of where I put the seam on the 356
