You're not crazy or nuts.  Parts are easily gotten (some more difficult, but, mechanical, pretty easy).  Yes, there are more beautiful cars on the planet.

I've been looking on the internet and the prices and conditions seen to be all over the map.

I'm looking for a high quality driver. Is an old sl the kind of car a guy and work on?

Depends on his skills.  Take a look at the tech manual (button above).

Hey WasFuzz - - - (I guess that means you are a retired cop?)

If you are a complete newcomer to the car restoration universe, you are setting the bar quite high for yourself by getting a 230SL.

That being said, you can be confident that by joining our fraternity of Pagoda addicts you will be in good hands when seeking advice about these cars.

Nope, you are not crazy.

I will make these comments though.  Don't rush and buy with your head,  not heart.  Walk away if there is doubt about the car,  no matter how pretty.
Condition is everything with these cars.  They thrive on maintenance and use - don't be scared of a high mileage car with good maintenenance in an enthusiasts hands.
I bought a one owner car with 160 000 miles on it 15 years ago and has put another 48 000 on it.  My maintenance over 15 years has been about $750/year.
Also,  if you want to use it,  buy the best driver you can afford.  If you buy a show car it becomes harder to actually drive it. I think about 20-25K will buy you an excellent driver.

Just my 2 cents worth.....

Cheers
Ollie
