But do you know what inspired her to sing the song?

Apparently, she was recording some tracks with Bobby Womak (Producer at the time).  When they finished recording they left the studio, where Janice made her way to aher porche sports car and Bobby made his way to his Mercedes Benz 600.  Joplin was amazed that Womak, who at the time only had production role, had the money to buy such an expensive car.  She asked him how he managed and he confessed that producing records was more lucrative than recording them.

Janice then, on the spot said "Oh Lord, wont you buy me a Mercedes Benz", and inspired, insisted that they went bank inside and recorded a song.  She quickly penned the song and recorded it in one take. 

All of the session musicians had left, so the only instrument on the track (percussion) was performed by Womak.

That gives a bit more detail to the story--and indicates it wasn't quite as ad-hoc as a line in a parking lot, followed by an immediate recording.
Bobby Womack was not credited as the producer; Paul Rothschild was.  Womack was given performance credit for guitar on the track "Trust Me". There is no musical credit for the track as it is considered an a capella track with just Joplin's vocal.
