Cattle are not particulaly bright, far less than a dog or even a pig. They will usually run away if chased unless it's a cow with a calf and that may only be a problem if you get too close and even then not very often. The idea that thery will charge at you is pretty much false.
However, if you see one with its ears back and head raised heading toweards you, you better get the hell out of the way!
If you calmly back away they usually won't come near you. Stand still long enough and the whole herd will all come over to sniff at you.
When we had cattle here I could look at an entire herd and pick out the one that was a bit on the edge - you know the one with it's ears back with that crazy white eyed stare? This type usually is the first to run away from you and not charge. It's all about watching what they do and knowing what to do. I can tell you one thing though - I don't miss them one bit.
